Fried eggs, sunnyside up

After I made the "bacon from starch water", I first thought about making a Bruger with it, but then I made another dish out of it. And for that I still needed these "fried eggs". There should be "Strammer Max", a hearty snack with "ham", "egg" and brown bread. I think the last time I did that was when I was a toddler. It was nice to eat that again and to remember the cozy evenings with the parents on the couch.

A small note, which I also found very important with the "Half Eggs", vegan eggs just won't taste like the original. However, you can give a dish a similar taste component or texture as the original, which is what the dish aims to do here. :)

Duration: Approximately 30-45 minutes

Difficulty: easy

Makes: 8-12 eggs / 4 servings (2 slices each) of "Strammer Max"

Ingredients:

"Egg yolk"

75g carrots (weighed unpeeled)

40g potato (weighed unpeeled)

30g water

20g oil

3g yeast flakes

2g Kala Namak

3g sweet peppers

Pinch of turmeric


"Eggwhites"

400g silken tofu

20g tapioca starch

15g glutinous rice flour

2g Kala Namak


Other ingredients for "Strammer Max"

8 slices of rye bread

Bacon

some oil to fry

chives

freshly ground pepper

a bit of salt

Preparation:

The "egg yolk" actually takes the longest.

To do this, the potatoes and carrots must first be peeled and cooked. When they are really nice and soft, the cooking water is poured off, the other ingredients are added and a delicious, creamy mass is made from them with a hand blender.

While the vegetables are cooked, the silken tofu can be pureed with the other ingredients.

When the individual components are ready, you can let a pan get really hot, brush with a little oil and then fry 1.5-2 tbsp of the egg white in it.

I definitely wanted to have a slightly brown edge, on the one hand to make it look like a "normal" fried egg, on the other hand to make sure that they are really well done.

Then you can take the "egg whites" out of the pan and leave them on a piece of baking paper while you finish the remaining ingredients or fry the other egg whites.

Then all you have to do is put the liquid "egg yolk" in the middle with a spoon and the "fried egg" is ready.

For "Strammer Max" I would then slice the bread, "butter" it and fry it in a pan.

Then add some delicious bacon to it.

... and then the food is served. First some bacon on the bread, then the "eggs". Sprinkle with some freshly ground pepper and coarse salt and top with a little bit of chives.
